Paleo Pecan Sandies

 

I'm back to cookies! It's been some time. I love making cookies because they make such an easy gift, and since it was a good friend's birthday a few days ago, it seemed like a perfect excuse to eat cookie dough give a heartfelt homemade gift.

Pecan Tassies


I have an attention span problem, particularly when it comes to baking. I can't seem to remake a recipe twice most of the time (there are, of course, exceptions). Once I make a recipe, I taste it, I photograph it, I share it, and then I store it away and move on past it to the next recipe. I can get irritated if I have to remake a recipe multiple times when I could be trying something new.

No-Bake Date Pecan Cranberry Bars


Up until a few years ago, I didn't like dates.  As a kid, I would think of them as giant raisins, a cousin to prunes, and that alone was enough to put me off.  But it's true that as you grow up and grow older, your taste buds change, foods that tasted horrible before may undergo a miraculous transformation on your tongue and you find that you actually really like them.  I can put a number of things in this category: broccoli, oatmeal, angel food cake, red bean soup, brussel sprouts, fresh coconuts, and of course, dates.  (I sound like I was a horribly picky eater as a child, don't I?  Oh dear.  Is it too early in this blog to be honest?)
