It occurred to me as I was looking through my previous posts that I haven't posted a cookie recipe for a month. One whole month. This might be a record. 

Blueberry Muffin Cake with Coconut Streusel

A few days ago I really, really wanted blueberry muffins, but I didn't want to have to go through the whole process of scrubbing clean a muffin pan.  Because, well, that's just a pain.
