The ratio is 1 cup milk plus 1 tbsp vinegar/lemon juice. Combine the two ingredients, let it sit for 10 minutes, and then use it as buttermilk in the recipe. I added chocolate chips which tastes great, but sadly, the cinnamon swirl through the middle of the cake, wasn't as physically noticeable with the chocolate chips layered about.
